TAPPAS PARTY

GARLIC SHRIMP

To make the most of the pungent garlic-chile oil, this dish should be served with a crusty piece of bread or poured over cooked pasta or rice.

1 1/2 lbs. large shrimp, peeled and deveined

1/4 cup extra-virgin olive oil

6 garlic cloves, lightly smashed and thinly sliced

generous pinch of crushed red-pepper flakes

kosher salt

2 tbs. chopped fresh parsley

1.  In a large skillet, heat the oil, garlic, and pepper flakes together over medium heat until the garlic just starts to take on color (this helps the garlic infuse the oil better than just adding it to the hot oil), about 4 minutes.

2.  Raise the heat to medium-high and add the shrimp.  Cook until they are opaque and bright pink on both sides, about 4 minutes.

3.  Sprinkle with salt and the parsley, and serve immediately.
